Firebean Coffee Roasters in Whitehorse, Yukon is a small family run roaster, roasting beans over open birch fire and turning them using a bicycle. The process is less exact and more akin to cooking than some modern roasting processes, and the result is wonderful and truly unique to the Yukon.
I use fresh roasted beans to create an intensely flavoured syrup which coats the all natural sel gris. This salt is best used for chocolate, caramel, or peanut butter desserts, but could also be added to rubs for grilling or roasting meat, or to a mole sauce for an extra layer of richness.
